This dish looks pretty if you use the white and green tortellini or ravioli. Again simple ingredients – big results! Add a small salad and you have a perfectly simple meal.
9 ounces fresh tortellini or ravioli with cheese filling or a filling or your choice
3 tablespoons olive oil
2/3 cup walnut pieces, chopped finely
dash of freshly grated nutmeg
1 cup heavy cream
1 cup freshly grated Parmesan cheese
salt and pepper to taste
Cook the pasta in a large pot of boiling water, salted, approximately 6 – 7 minutes. Drain well.
While the pasta is cooking, heat the olive oil in a large skillet. Add the walnuts and cook over medium heat, stirring, until the nuts are toasted, approximately 3 minutes.
Add the cream to the skillet and bring to a boil over medium-high heat. Cook 1 minute. Stir in the Parmesan cheese and nutmeg. Season the sauce to taste with the salt and pepper.
Drain the pasta, add to the sauce.
