Roasted Asparagus

This is so easy, inexpensive and good cold or hot.   

2 bundles fresh asparagus

Olive oil

Kosher salt, plus extra for sprinkling

Freshly ground black pepper

Preheat oven to 400 degrees or cook on the grill

 Break off tough ends of the asparagus.  Place the asparagus on a baking sheet, drizzle with olive oil coating the asparagus completely.  Place in a single layer – salt and pepper heavily.  Roast the asparagus for 25 minutes for larger asparagus, 15 minutes for smaller.  If you are cooking on the grill, 10 – 15 minutes, moving often, and start out on the cooler side of the grill.  You want the asparagus tender but still crisp.  I prefer to cook on the grill because I like the taste better and the grill marks.

 Now you have a couple of options, eat just like they are, sprinkle with Parmesan cheese, or if you are from the South you would dip them in homemade ranch dressing or a homemade Parmesan dressing.
