In our family we like to grill out together, especially in the summer. I first had this salad at a luncheon for my dear friend Joanna Cranford given by Ann Hughes in Rossville, TN. It’s a refreshing summer salad that you will want to make throughout the hot summer days when it’s too hot to use your oven. It’s addictive! My mouth is watering just thinking about this dish…YUM!
I usually double this recipe.
2-3 cups diced smoked chicken
1 cup diced celery
2 tablespoons lemon juice
1 tablespoons minced onion (I like a little extra!)
1 teaspoon salt (If you season your chickens prior to cooking, omit this salt.)
1/3 cup mayo
1 cup seedless green or red grapes
1-11oz. can mandarin oranges, drained
1/2 cup toasted sliced almonds
Place salad on leaf lettuce and add extra orange slices.
